Abstract
This study was determ ined the chem ical composition of desert date (Terminalia chebula),also determined the effect of desert date raw or soaked in water for 24 hour w ith change the water each 12 hours on some biological tests in rats such as :blood glucose levels,serum lipid,
amino transferase activity and end products of protein m etabolism.
Also,determ ination the sensory evaluation for som e food products
such as:pizza,croissant,Pattie and ice cream of desert date.Also,
studied the antim icrobial effect of Term inalia chebula on som e
pathogenic bacteria such as :Sta phylococcus aureus ,Bacillus cereus,
Salmonella sp,E.coli,molds &yeasts.
