Abstract A sum of 100 random milk samples were collected from different sources ino1udin stet vendor dairy shops, dairy farms, in Bebera ovinoe. Each sample was I chemically and baotoriologically examined nm order to determine its sanitary coriition. The chemical examination of street vendors milk samplo revealed that the mean values of specific gravity, fat %,T.S.%, I $.NJ.%, ad titratable acidity % wore 1.027 0.0034, 4.5 ,± 0.2306, 10.96 0.5128, 6.5 + 0.3098 and 0.16 0.0164, respectively. Oorresponding values for milk from dairy shops were 1.032 0.0045, 5.5 0.1224, 13.74 0.1013, 8.2 0.0747 and 0.20 0.0095. While in case of dair1 farm samples, these values were 1.036 ± 0.0121, 7.5 0.087’?, 16.35 0.189?, 8,8 ÷ 0.1158 aM 0.20 ÷ 0.0114 for buffaloe’s milk, and. 1.031 0.0014, 38 0.2302, 10.68 0.2191, 6.9 0.2135, and 0.14 0.0030 for cow’s milk, respectively. The results obtained, for fat, total solids and solids— not—fat revealed the presence of both types of adultration (parbial skimming and addition o± water in most samples of street vendors, and cow’s milk from dairy farm samples of bu.ffaloe milk from dairy farms were in good agreement. |
