Abstract This thesis is planned To study the effect of some cultivation conditions on the viability and acid production of single and mixed-strain starters of lactic streptococci cultures. The study also aims to investigate the effect of some methods of preservation, mainly freezing and Freeze-drying (lypophilization) on the viability and activity of the same lactic streptococci cultures, cultivated under the best conditions which will be concluded from the first part of the present work . The changes in acidity produced by lactic culturEs grown in cow’s milk during incubation show similar trends to those grown in buffaloe’s milk. |
