Abstract

Bacteria, viruses, parasites and fungi existing in the environments cause diseases to the consumers, and they contaminate the consumable food materials easily.The diseases that caused by the consumption of contaminated food materials are called foodborne diseases.The incidence of these diseases has increased over the years and resulted in major publichealth problem globally. The conventional methods used to detect foodborne pathogensare sensitive, inexpensive, and can giveboth qualitative and quantitative information on the number and the nature of microorganisms present in thefood sample, butare time consuming and laborious. To protect human health, it is necessary to rapidly detect these microorganisms from the source. Recently, researchers are focusing on the progress of rapid methods for foodborne pathogens detection, identification and monitoring developments including nucleic acid-based methods, immunological methods, biosensor-based methods, instruments methods... etc.This study reviews the principles, characteristics and applications of these recent methods. These developments of rapid detection methods are vital in prevent and treatment of foodborne diseases.
