Abstract Red meat contains high biological value protein and important micronutrients that are needed for good health throughout life. It also contains a range of fats, including essential omega-3 polyunsaturated fats. Our investigation presented production of healthy burgers by adding vegetables in 25% to meat to increase vitamins, minerals and lowering cost. Study suggested 3 formula beef burger formula 1 (control burger), formula 2 (control burger+sweet potatoes+carrot+broccoli+squash) and formula 3 (control burger+sweet potatoes + carrot +broccoli +squash)then data show that formula 2 and formula 3 have high ratio of vitamin ,minerals and phenols so The reduction in the formulation cost achieved by increasing levels of vegetable compensated the slight decline in biomass gain. Besides that, vegetable have health benefit. In the recent years there is growing concern regarding the nutritive value of foods and to nourish the ever increasing population and the inadequacy of essential nutrients can be improved through fortifications and enrichment of food vehicles. A balance of nutrients may be obtained by including whole cereals, vegetables, pulses and milk and milk products etc. Such a diet provides a large proportion of our need for energy, carbohydrate, protein, dietary fiber, amino acid and mineral. Processed foods and fast foods have become mainstay of typical diets in modern society. In developing countries like Egypt rapid urbanization, industrialization, globalization as well as increasing in number of women workforce have resulted in rapid inclination towards fast foods |
