Abstract

Despite studies on apiaceous fruits flavor makeup, there is no much known regarding aerial
parts aroma. Five major apiaceae crops viz., anise, caraway, celery, dill, and fennel were
analyzed to identify their volatile via GC-MS of aerial parts essential oils (Eos) to reveal 56
volatiles. The most predominant were limonene, cymene, phellandrene, myrecen, anethole,
estragole, and germacrene D. The fresh aerial parts were analyzed via headspace solid-phase
microextraction, within identified 47 volatiles the largest proportion of them is oxygenated
monoterpens due to anethole and estragole. Furthermore, Sylilated aerial parts were analyzed
to identify the primary metabolites for the five plants to reveal 58 constitutes. Sugar and
sugar alcohol represented the high percentage in all specimens because of mannose, glucose,
arabitol, and mannitol high level responsible for the sweet taste. Anti- tuberculosis was
applied for the five plants and gave interesting results for celery, dill, and fennel by MIC
0.98, 1.95, and 3.9 respectively.
