Abstract Aflatoxins are highly toxic, mutagenic, teratogenic and carcinogenic compounds that have been implicated as causative agent in human hepatic and extrahepatic carcinogenesis (Kamkar, 2005; Massey, Steward, Daiel, & Ling, 1995).Aflatoxins are toxic and carcinogenic products produced by a variety of fungi. Alaflatoxin type M1 is the main carcinogen that is often found in milk and dairy products that are widely consumed, which is a major impact on human health. The current study was carried out to study the extent of milk contamination and some dairy products in aflatoxin.This has been analyzed in a total of 140 samples (60 raw milk, 20 infant powder milk, 20 dried milk, 20 processed cheese and 20 Roman cheese) to detect levels of AFM1. The samples were randomly collected during the October of October 2017-February February 2018, from farms Dairy and local markets, Cairo, Mansoura, Egypt. The method used is the ELISA technique. The results show that the prevalence of aflatoxin in Ras cheeses, treated cheeses, raw milk, milk powder and infant formula was 100%, 95%, 88.3%, 60% and 35% respectively.The results showed that the level of aflatoxin M1 in bulk milk, dried milk, powdered infant milk, processed cheese and turkeys 42.8%, 14.3%, 14, 3.%, 14.3%, 14.3%, respectively, medium value (0378, 026, 019, 016, 031 mg\kg), respectively. The level of aflatoxin M1 was compared to milk and dairy products. The proportion of positive samples of milk, dried milk and powdered milk was infants, cheese processor, 53 (88.3%), 12 (60.0%), 7 (35.0%), 19 (95.0%), 20 (100.0%), respectively. |
