Abstract This study was conducted to evaluate the fruits and vegetables wastes as a by-product in order to reduce the environmental pollution and to obtain valuable products for the food systems. Four main products were considered; apricot kernels protein isolate, mango kernels protein isolate, carrot peels fiber and potato peels fiber. The protein isolate was used at different levels to supplement in some meat products such as beefburgers, while carrot peels fiber and potato peels fiber was used to supplement wheat flour in some bakery products such as cake and biscuit. This study was carried out in six sections as follows: 1-Evaluate the chemical composition and amino acid composition of apricot kernels, mango kernels and protein isolate from them by two different methods. 2-Evaluate the chemical composition of carrot peels, potato peels and extracted fiber from them. 3-Evaluate the functional properties of protein isolate. 4-Utilization of protein isolate from apricot kernels in supplement of some meat products (beefburgers). 5-Utilization of extracted fiber from carrot peels in supplement of some bakery products (cake). 6-Utilization of extracted fiber from potato peels in supplement of some bakery product (biscuit). |
