Abstract

A total of one hundred random samples of liver, kidney, heart, masseter muscle and tongue of twenty young and aged male sheep. The samples were collected in polyethylene bags, all of which were kept in ice box and transferred immediately to the meat hygiene laboratory, Faculty of Veterinary Medicine, Zagazig University. The samples were then extracted for metals and analyzed to estimate the level of Cd, Pb, Zn and Cu by Atomic Absorption Spectrometry (AAS).
Cadmium (Cd):
In young male sheep, table (2) shows that the mean values of cadmium concentration in fresh liver, kidney and heart samples of sheep were 0.0664 ± 0.006, 0.065 ± 0.0045, 0.0744 ± 0.009, 0.0531 ± 0.0041 and 0.0425 ± 0.0035 ppm, respectively. While, in aged male sheep, the mean values of cadmium concentration were 0.952 ± 0.081, 0.8 ± 0.099, 0.752± 0.046, 0.606 ± 0.216 and 0.612 ± 0.077 in fresh liver, kidney, heart, masseter muscle and tongue samples of sheep in (ppm), respectively.
After treatment:
As shown in fig. (1, 2, 3, 4 and 5), after dipping the samples in acetic acid 5% for 15 minutes and after boiling in water at 100ºC, the mean values of cadmium levels were 0.312 ± 0.117 and 0.692 ± 0.121, 0.28 ± 0.126 and 0.452 ± 0.115, 0.248 ± 0.131.
