Abstract The present process for sugarcane black honey industry in Egypt is described as follow: The raw juice is fed to open stainless steel container, the heating element used is bagasse or other solid wastes which is burned in channel under the container, while manual agitation is done by wooden bar. Heating and agitation are continued until the desired concentrations are reached. The disadvantages of the present process are as follows: 1- Air emission in the work place environment. 2- Temperature is not adjusted, so low quality product is produced. 3- Particulate matter with the flow gases are falling down in the open containers mixed with the black honey during manual agitation and discharging causing unhealthy product. The aim of the present work is to produce healthy sugarcane black honey by carry out the following steps: the raw sugar cane juice is filtered, pH is adjusted by citric acid to convert sucrose to glucose and fructose. The treated juice is concentrated in a vertical tube single effect evaporator. Calculations and design of such process was aimed to a void air emission, get high quality product by using temperature adjustment and thus clean and healthy sugarcane black honey can be produced. |
