Abstract

Hypercholesterolemia occurs when there is too much cholesterol in the blood resulting in increased risk for development of atherosclerosis. Soybeans have a high-quality protein and phytochemical that has beneficial effects on diabetes, obesity, and serum lipids. This study was carried out to determine the possible preventive effect of using γ-irradiated and/ or extruded soy flour as dietary supplement on hypercholesterolemic rats. The results showed that the chemical composition of raw soy flour not significantly changed by the irradiation (5 &10 KGy) and /or extrusion except the moisture content was decreased by extrusion. Also, the levels of some antinutritional factors were significantly reduced. After the 10-wk experimental period, the results revealed that supplementation of HCD with either raw or treated soy flour significantly lowered the level of lipid profile, glucose concentration, improved liver and kidney function as well as reduced the level of malondialdehyde accompanied by a significant increase in a high density lipoprotein, glutathione reductase activity and the level of total antioxidant status. In conclusion, using of processed soy flour as a dietary supplement pointed out to its hypocholestrolemic effect by improving the lipid levels in the serum of hypercholestrolemic rats.
