Abstract The seeds of two new soybean cultivars were used in this work for studying: 1- The levels of some ANFs and the effect of germination and some other processing treatments on these ANFs. 2- phytate concentration in cotyledons, hull and protein isolates. 3- Effect of pH on the solubility of phytate and protein. 4- Effect of germination on phytase activity and phytate. 5- Preparation of partially purified phytase from seeds germinated for 8 days. 6- Removal of phytate from protein isolates by partially purified phytase. 7- The functional properties of soybean defatted meals and their proteins isolates. |
