Abstract
Targeted assessment of this letter of biological and chemical contaminants that may reside on the mushrooms (mushrooms), so being a perishable food and corruption, a favorable environment for the growth of microbiology because of its chemical structure, which includes a very high percentage of moisture up to about 90% and therefore the validity of this the food product does not exceed 6 days in the best conditions of production and circulation as a primary raw material.
As we know how important food and health and economic mushrooms and the lack of studies in the Arabic library on the subject of our study we tried to include both types deployed in the local market.
